Our extra-virgin olive oils
We select Extra Virgin Olive Oils which are produced in olive groves subjected to rigorous periodical controls during all productive stages. The olives are picked by hand directly from the trees, from the end of October up to the end of November.

The picked olives must be pressed within the next 24 hours. The oil extraction takes place by centrifugation, duration and temperature (at maximum 27°C) are strictly controlled during the whole process in order not to compromise the distinctive features of the fresh olives.

Our Extra Virgin Olive Oil produced in this way is a clear green colour with golden highlights with a perfume of fresh olives and fruity taste, low acidity and full of poly-phenols (anti-oxidatives). It is then kept in stainless steel tanks, sheltered from the light and in lack of oxygen in order to preserve the organoleptic features and the huge amount of poly-phenols, in the most appropriate way.

TARKUN
The Etruscan name of Tarquinio Prisco, the first etrurian King of the Roman Empire.
An extra virgin olive oil with intense fruity fragrance and persistent notes of grass and artichokes. It is highly recommended uncoked with soups, vegetables, legumes, roasted meat and “bruschetta”.

Comasta

COMASTA
The sense in Etruscan language was "To feast" and/or "Messmate".
It is an extra virgin olive oil with a medium fruity flavour, a taste of grass and tomato combined with leaf and artichoke.
Recommended as it is on meat and vegetable dishes.

Oro di Tuscia

ORO di TUSCIA
A delicate extra virgin olive oil, with a medium fruity flavour and a well-balanced taste between bitter and sharp. Because of its distinctive aromatic features, it suits the most delicate and young palates, as it is never too strong. It is recommended raw for fish and vegetables dishes but it is also tasty with roasted meats and flavoured soups.
