it can suggest more than it actually means : from this word we can only learn that it is a “virgin” oil, but it is always possible that the result of a first pressing is an oil which does not comply with the standards to be considered an extravirgin olive oil;
Dietetic Oil
this is not, as the name would lead to believe, an oil “that is not fattening”, but oils which have additional vitamins and other essential ingredients, in any case already present and a fundamental characteristic of native oils;
Light
a description which is very fashionable today for light coloured and not excessively intense flavours whose appearance give the impression of low density; the calorie-energy intake is identical for all oils (including those deriving from seeds) and the assumption according to which a “stronger” colour and a more intense taste corresponds to a “heavier” oil, and therefore less digestible, is absolutely false;
Cold-pressed
correct processing methods impose, during all the production phases, that temperatures be kept as low as possible; notwithstanding that a totally cold process is impossible - the mechanical pressing process already creates heat -; the addition of hot water can alter the components of the flavour of the product, but it is extremely difficult to detect for certain, an oil that has been subjected to such treatment;
Must
the oily must is an emulsion of oil with misted water and suspended mucilage; also in this case the term is excessively vague, as it is possible is that a must oil does not conform to the standards foreseen by the laws in force.
